Region
Only 100 miles south of Paris, Chablis represents the northern limit of Burgundy`s wine regions, centred around the town of Auxerre. The soils are predominantly limestone and chalk, perfect for the Chardonnay grape, the only variety allowed in Chablis.
Chablis, along with Champagne, is the original `cool climate region`, with frost being a common problem. However careful siting of south facing vineyards enables the vignerons to produce classic, dry, and steely wines. The most complex of these are produced from the seven Grand Cru vineyards which are all located on the northern slopes that overlook the town of Chablis itself, with famous names such as `Les Preuses` and `Grenouilles`. The Premier Cru vineyards are scattered around Chablis on the slopes of the valleys and here produce excellent quality wines with a little less intensity.
Producer
The key to top quality Burgundy is the skill of the producer and here its talented winemaker Nathalie (former winemaker at La Chablissiene) who crafts outstanding examples from this famous region.She married Gilles Fevre a son of the William Fevre Dynasty, whose vineyards are renowned for the production of some of the finest wines in the region. This is a winning combination and they have received many accolades for their wines. Great believers in letting the grapes `do the talking` with as little intervention as possible this ensures that the wines express a natural `terroir` . The result is a wonderful growers Chablis. A real gem!
Tasting (Long)
This premier cru Chablis originates from vineyards situated on long slopes facing the sunrise, allowing the sun to warm the soil for as long as possible, aiding the ripening of the grapes. Long and rich, with fruity flavours and mineral notes, with a lovely smooth rounded finish, whilst retaining the classic mineral terroir.
Tasting (Short)
This premier cru Chablis originates from vineyards situated on long slopes facing the sunrise, allowing the sun to warm the soil for as long as possible. Long and rich, with fruity flavours and mineral notes and a lovely smooth rounded finish.
Food
A good match for shellfish, grilled fish and lobster, as well as chicken dishes or goats cheese.
