Aligote

The second white variety of Burgundy and still widely planted in the south of the region, particularly on the higher slopes and on limestone soils. It has a well-rounded, slightly steely characteristic with fresh acidity. A broad structure and bright acidity combines to offer attractive drinking at an earlier age than Chardonnay. Aligoté is not usually aged in oak but does pick up some yeasty lees character. It is the classic base for the Burgundian aperitif ‘Kir’ when mixed with a dash of Cassis de Dijon. Outside Burgundy there are very few Aligoté plantings of note.
